Great with fish or chicken - especially if it's spicy, or in Mexican style wraps or tacos.
And a great way to have a go at using a new ingredient you might not have tried before - more about the chayote/mirliton/choko/christophene here!
Serves four in wraps as a topping (e.g. 8 regular-sized tortillas) for 18 calories per serving; or two as a side for 36 calories per serving.
1 chayote, peeled and de-stoned, either cut into into 1/2 to 1cm dice for salsa, or cut into fine julienne for slaw (200g) 
1/2 small green pepper, cut into dice for salsa, or finely sliced for slaw (40g) 
1 green (spring) onion, finely sliced 
Juice of 1 lime (2 tbsp / 30ml) 
1/2 tsp each of salt and sugar 
Small handful coriander leaves, chopped 
1 tsp chipotle chilli sauce (Heinz do a version which is widely available in the UK, if you're struggling to find any, and it's gluten free) 
Mix all of the ingredients together in a bowl, leave for flavours to mingle for half an hour or more (keep chilled) and serve. Will keep in the fridge for a few days.
